One thing to watch for: if you save and plant hybrid (F1) seeds, the plants may look different from their parents. For your first attempt, you are more likely to succeed by starting with open-pollinated vegetables whose traits carry on reliably from generation to generation.

In the first year, lettuce is by far the easiest. Once the flower stalks come up, fluffy seeds fall in abundance, and just brushing them off by hand can fill a bag.
Supplies and Budget
- A few paper bags or paper medicine envelopes (1,000-2,000 won)
- Sieve or fine colander (already owned or 3,000 won)
- Permanent marker (already owned)
- Newspaper or plates for drying (already owned)
- Optional: small airtight glass jar (2,000-5,000 won)

Difficulty and First Attempt Order
Two out of five stars for difficulty. The hard part is not technique but waiting. You need to leave one plant unharvested past the best eating stage until the seeds mature.
- During harvest season, choose 1-2 of the strongest plants as seed plants and do not pick them.
- For lettuce, leave the flower stalks until they grow fully and develop fluff, usually 3-4 weeks after the normal harvest period.
- When the seeds are dry, hold a bag underneath and brush them off by hand.
- Spread them on newspaper and dry them thoroughly in the shade for another 3-5 days.
- Winnow them with a sieve to remove husks and dust, leaving only the seeds.
- Write “lettuce, seeds collected 2026.6” on a paper bag and store it in a cool, dark place.

Note: Put seeds in a paper bag, not a plastic zipper bag. Tiny amounts of moisture left inside plastic can invite mold. The safest method is two-layer storage: dry the seeds completely, keep them in the paper bag, and place the whole bag inside an airtight glass jar.
