An Easy Sequence for Seasoning Soups and Broths

2026-06-11 · about 3 min read

The reason seasoning soup is difficult is usually that people try to add everything at once. Once salt goes in, it is hard to take out, but you can always add more, so the standard approach is to start with less and work your way up by tasting. If you also follow the right order for seasoning, you can avoid most failures where the soup turns out too salty or too bland.

Season in the order of base seasoning → salt → finishing aromatics

First build the main flavor structure of the broth with fermented seasonings such as doenjang, soy sauce, or gochujang. Then fine-tune it with salt, and finish by adding aroma with pepper, scallions, and garlic. Fermented seasonings add not only saltiness but also umami, so setting the base first gives the soup depth while using less salt.

  1. Dissolve only 80% of the standard amount of base seasoning, such as doenjang or soy sauce, into the boiling broth first.
  2. Boil for 1 minute so the flavors can blend, then taste a spoonful.
  3. If it tastes bland, add salt only 1/4 teaspoon at a time and taste again after each addition.
  4. When the ingredients are fully cooked, finish with scallions, minced garlic, and pepper for aroma.
💡
Note: When checking the seasoning, let a small amount of broth cool slightly before tasting. When it is very hot, saltiness tastes weaker, making it easy to accidentally over-season.

Ways to recover when it becomes too salty

  • Add a little more water or stock to lower the concentration, then simmer long enough for the flavors to come back together.
  • Add potatoes or radish and simmer; they can absorb saltiness and make the flavor gentler.
  • Add tofu or egg to mellow the saltiness while increasing the volume.
  • If the soup suits a touch of acidity, a few drops of vinegar can reduce how salty it tastes.

Let leftover soup cool briefly, transfer it to an airtight container, and refrigerate it for up to 2 to 3 days. However, soups containing tofu can become mushy if reheated repeatedly, so it is best to finish them within two reheats. If the seasoning has become concentrated when reheating, add a little water to adjust the strength, and skim off the foam once as it boils for a cleaner taste.
